How to bone whole fish

Cut the head and tail off the whole fish and remove the fins with a pair of scissors.  You then need to lay the fish with its skin side up on a chopping board. Run your fingers firmly up and down the backbone several times so that when you turn it over the backbone and any loose bones come away.
