How to remove skin from chicken

You can lower fat in your diet by removing the skin from your chicken before you cook it.  There is a lot of fat in the skin.  The following steps will help you remove the skin from a whole chicken.

  • Lay the chicken on a chopping board with the breasts facing down and slice through the skin along the backbone.
  • Cut off the wings at the first joint and then cut around the end of each drumstick to loosen the skin from the legs.
  • Beginning with the cut you made at the backbone peel the skin away.
  • Next cut or pull the skin from the breastbone.

You can skin one piece of raw chicken by holding the looser end of the skin firmly and pulling it away.  If you wanted to skin chicken that is cooked you should wait until it is cool enough to touch and then pull the skin away.
